This lot is a hill separation processed at the Heza washing station run by the Long Miles Coffee Project. Cherries are delivered by smallholders from the Mutana Hills, located at staggering elevations of 2100-2200 MASL. Hill separations like this are exciting to us - with further lot separations leading to significant quality improvements and traceability. This particular lot is notably clean and clear, with flavors of lemon black tea, citrus marmalade, dates, and baking spices, along with floral notes of bergamot.

This exceptional coffee is sourced through the Long Miles Coffee Project, an initiative founded by Ben and Kristy Carlson in 2011. Their mission is to provide agricultural support to coffee growers in Burundi while enabling roasters to access consistently high quality and traceable coffee from the region.

Cherries are hand-picked at peak ripeness, floated, and hand-sorted to remove defects. The cherries are then pulped and undergo a 36-hour fermentation in water. The seeds are then agitated to remove all of the mucilage, density sorted and soaked for another 4-6 hours before a final rinse. The seeds are then moved to dry on raised beds until a moisture content of 10.5% is reached.
