We had to work extremely hard to secure this lot - one of Daye Bensa's special preparations, of which there was an extremely small amount available. Many of these lots tend to typically go to the Asian/Middle eastern markets, so to get a small allocation AND have it be the first Eth of the season when we served it at LCF- what a treat
Once this coffee rests and opens up it's an absolute deliiiiight. Super elegant and structured
We’re tasting:
Super bright, juicy and clean. Ripe white peach, the citrus bite of bergamot alongside clementine, kaffir lime leaf, cherry blossom & brioche, as it cools becoming like a rose & hibiscus floral tisane. As it cools the floral tea element becomes more like milk oolong. Structured, elegant and super complex

Anoxic Washed: Ripe cherries delivered to Rumudamo and floated/sorted before being placed in sealed barrels for a 96 hr fermentation in an anoxic enviroment. Cherries then pulped & washed, before drying on raised beds over 2-3 weeks, with continual sorting and shade temperature control. |
