The Shyira washing station produces what we consider to be some of the best coffees coming out of Rwanda - extremely high altitude farms and precise processing combine to produce superlative results. For our second harvest purchasing from Shyira, we've brought back 2 bangers (including the anoxic natural that was up there with our best coffees of 2024) alongside a honey process.

This year's anoxic washed is outrageous compared to last year - big improvement in acidity, florals and structure. We regret not booking more

We're tasting:
Aromatics of sweet citrus & jasmine florals reminding us of coffee blossom. Very bright in the cup, white florals alongside sweet red grapefruit, blackcurrant & brown sugar; syrupy bodied & all sitting on a base of the classic Rwandan profile of stonefruits & warm spices

Process:
Anoxic Washed: Cherries floated & underripes skimmed, placed in a clean tank with a plastic sheet on top, which is then weighed down with cold water. This “water pillow” fermentation weight allows for an extended 48hr anoxic ferment with temperature control. Post ferment, the cherry is pulped, and the parchment is run through grading channels to both seperate by density and scrub off mucilage. Clean parchment dried on raised beds over 2-3 weeks.
