Product Information

Hachi was born simultaneously in Colombia and Panama, managing five farms with a total cultivable area of 170 hectares—157 hectares in Cauca, Colombia, and 13 hectares in Volcán, Panama. Currently, 18 hectares are in full production, planted with exceptional varieties including Geisha, Sudan Rume, Laurina, Chiroso, Maragogipe, Parainema, Landrace, Typica, Pink Bourbon, and Caturra. In addition to cultivating their own coffee, they’ve also developed a trusted network of allied producers who consistently supply our processing centres in both Colombia and Panama with cherries grown to meet their rigorous quality standards. This rare pico-lot features the Ethiopian Landrace variety, grown at Rocky Mountain Farm in Santa Clara, Panama, owned by Allan Hartmann. The cherries are harvested at peak ripeness, then sterilised and subjected to a 24-hour aerobic fermentation while submerged in water. This process uses intermittent recirculation to enhance microbial activity and intensify flavour development. The precise fermentation enhances the intrinsic character of the Ethiopian Landrace, followed by mechanical drying to preserve the integrity of both the variety and the process. The result is a cup that is distinct and intricate, offering a perfect balance between varietal expression and processing innovation—a level of excellence made possible only through the combined expertise of Diego Bermudez and Allan Hartmann, honed over years of innovation in specialty coffee.

Hachi—meaning “eight” in Japanese, a symbol of infinity, prosperity, and renewal—represents the visionary collaboration between two icons of the coffee world: Diego Bermudez of Colombia and Allan Hartmann of Panama. At Sweven, we’ve had the privilege of knowing and working closely with both Diego and Allan for years, and the Hachi Project is a natural evolution of that long-standing relationship—built on trust, shared values, and a relentless pursuit of quality. By uniting Diego’s groundbreaking work in fermentation science and biotechnology with Allan’s deep-rooted expertise in Panamanian coffee tradition, the Hachi Project redefines excellence in coffee cultivation and processing.
